Salads are a great way to get more greens into your diet and the different combinations of fruits, vegetables, herbs and dressings mean a lot of variety.If you want something Asian as a starter for your meal, a Vietnamese Pomelo salad works well. Peel and thinly slice six shallots then brown two-thirds in a pan with some olive oil. Add diced mango, pomelo, basil, half the fried shallots and raw shallots in a mixing bowl. To make the dressing, mix coconut sugar, fish sauce, distilled white vinegar and lime juice. Toss the salad, then add some lime wedges and thinly sliced red chilli pepper for a garnish. This salad is light and refreshing but also has a bit of a kick to it!
Salads don’t just make great side dishes – add a little protein and they can make a filling main course too. Salmon is a great healthy fish, high in Omega-3 fatty acids, so why not try having a Salmon and Avocado Salad for lunch or dinner?
Season your salmon in sea salt, ground pepper and extra virgin olive oil and leave it in your refrigerator for 6 hours or overnight. To make the sauce, smash some avocado and season with lemon juice and salt and pepper to taste. Slice up your salmon, add lettuce and cherry tomatoes on the plate then put the avocado sauce. The final touch? Drizzle some lemon juice and decorate with sesame seeds.
If you want something really unique, try making a Salad Cake! To start, remove crusts of whole wheat bread, slice into triangles and arrange in the bottom of a springform pan. Spread hummus over the bread, then place thinly sliced cucumbers over the hummus. For the second layer, put another layer of bread with butter (butter side up), add smoked salmon, then top with lettuce. Place another layer of bread then leave the “cake” in the refrigerator to chill for 2-3 hours. Combine cream cheese and sour cream for frosting
Once ready to serve, remove cake from the pan and “frost” with cream cheese mixture. Then get creative with decorations – edible flowers, radish and parsley are just some of the toppings you can add to make your salad cake pretty. It’s a fresh way to present a salad and a sure conversation starter.
Power up your day
If you are used to having sweets for a breakfast, here’s a healthier way to power up your day – bake Banana Muffins but with whole wheat flour. Add yogurt for additional moisture and use only ¼ cup of brown sugar. The bananas will add sweetness to the muffins, pecans add crunch and the dark chocolate chips will satisfy your chocolate fix.
This year, give your regular go-to chips and cookies a break and try to incorporate veggies in your snacks too. Fix yourself Meatless Healthy Nachos with mushrooms, jalapenos and cauliflower. To make your toppings, preheat your oven. On one baking sheet, put cauliflower tossed with olive oil and sea salt. Toss mushrooms and jalapenos with olive oil and sea salt and put it on another sheet. Roast both sheets until tender.
To make cauliflower quezo, cook more cauliflower, shallot, whole milk in a pot, then puree in a blender until smooth. Stir in the Monterey Jack cheese and add more milk or water to make it a drizzle-able consistency. Then scatter the roasted veggie mixture, drizzle the cauliflower quezo and add some scallions over tortilla chips and enjoy!
